Puliyodharai recipe (Puli sadam) – Tamarind rice Selvi Amma Samayal

INGREDIENTS
FOR PULIYODHARAI MASALA POWDER:
4 tablespoon nalla ennai
1 tablespoon coriander seeds
2 tablespoon urad dal
2 tablespoon chana dal
½ tablespoon pepper
¼ tablespoon fenugreek seeds
4 dried kashmiri red chilli
1 tbsp sesame
OTHER INGREDIENTS:
2 tablespoon nalla ennai
1 tablespoon mustard
½ tablespoon urad dal
½ tablespoon chana dal
2 tablespoon peanuts, roasted
1 dried kashmiri red chilli, broken
few curry leaves
1 cup tamarind extract
¼ tablespoon turmeric
½ tablespoon jaggery
1 tablespoon salt
3 cup cooked rice.

How to make Puliyodharai recipe:

In a pan heat 1 tablespoon gingelly oil. Fry 1 tablespoon coriander seeds, 1 tablespoon urad dal, 1 tablespoon chana dal, ½ tablespoon pepper, ¼ tablespoon, 6 dried red chilli on low flame. Cool the spices completely and transfer to a small mixi jar and blend to fine powder without adding any water. Now puliyodharai masala powder is ready.

In a large kadai heat 3 tablespoon gingelly oil. First mustard seeds splutter 1 tablespoon, ½ tablespoon urad dal, ½ tablespoon chana dal and 4 tablespoon peanuts and 3 red chill, add few curry leaves, saute for few seconds. Squeeze the juice from a hand sized tamarind soaked in 1 cup of water for 30 minutes. Then add ¼ tsp turmeric, ½ tsp jaggery and 1 tablespoon salt. mix well and boil the mixture for 15 minutes. Continue to boil till the oil separates from the mixture. now add 1 cup cooked rice and mix gently. finally, temple style Puliyodharai is ready to eat.
