Salem Thattu Vadai Set is a famous street food from Salem, a small town in Tamilnadu (in the southern part of India). Ingredients

FOR THE BEET-CARROT FILLING:
½ cup grated carrots
½ cup grated beetroots
¼ cup thinly sliced onions
Juice of half a lemon/lime
3 tablespoons chopped coriander leaves/cilantro
Salt to taste
2 finely chopped green chillies/jalapenos (optional)
FOR THE GREEN CHUTNEY:
1 cup coriander leaves/cilantro
½ cup mint leaves
3 to 4 green chillies/jalapenos
2 to 3 cloves of garlic
Juice of half a lemon/lime
Salt to taste.
FOR THE RED CHUTNEY:
1 medium onion, cubed
2 tomatoes, chopped
2 cloves of garlic or ginger
1 teaspoon red chilli powder
1 small marble size tamarind or ½ teaspoon tamarind paste
Salt to taste
2 teaspoons of cooking oil
Optional toppings or fillings:
Spicy roasted peanuts
Spicy khara boondis/deep fried besan batter balls
